Meet Sylph, a true gem in our Collab Series, born from a beautiful friendship with our good pals Margaux and Max from Alma Café in Belgium. This is more than just a coffee — it’s a rare micro-lot, crafted with care, purpose, and a whole lotta soul.
Sylph hails from the misty, high-altitude forests of Caripe, Venezuela, a region bursting with biodiversity and coffee-growing heritage. It’s a Yellow Catuai, brought to life through the Red Honey process — giving you a clean, syrupy cup with sweet tropical notes, delicate acidity, and a silky finish that’s just perfect for filter brewing.
This coffee is as rare and radiant as the bird that inspired it — the Venezuelan Sylph (Aglaiocercus berlepschi), a dazzling long-tailed hummingbird native to the same mountains where this coffee was grown. Just like the Sylph, this coffee is vibrant, elegant, and hard to forget.
Produced in super limited quantities, this micro-lot is a tribute to Venezuela’s untapped beauty and potential — a country with deep coffee roots and stories waiting to be told. It’s part of a shared dream to shine a light on Caripe’s vibrant terroir and the passionate people behind every bean. YELLOW CATUAI
Yellow Catuai was created in 1949 by the IAC (Instituto Agronomico de Campinas) in São Paolo, Brazil, and is a cross between Yellow Caturra and Mondo Novo.
HONEY PROCESS
The honey fermentation process is a hybrid process in which the fruit is removed from the bean, but the bean remains with remnants of the fruit on it. The bean is then sun-dried and a mucilage is formed around the bean, hence the name “honey” process. The remaining fruit is physically removed from the bean instead of being washed off during the milling process. Using this fermentation process has led to complex cuppa joe.

The historical archives of Hacienda Cocollar recount the narrative of how Doña Concepción Albornett de Avila graciously received a substantial gift from her husband, Don Jesús Avila—a plantation adorned with over 10,000 coffee plants.
Across two generations, this legacy has burgeoned into a thriving orchard of over 100,000 coffee trees, bestowing the world with the exquisite Venezuelan criollo beans.
